Zucchini is one of those great wondrous foods that is great for hiding in dishes, as it doesn’t have a really strong taste, perfect for fussy eaters!

Did you know it is related to the squash family and is actually a fruit not a vegetable? But it looks more like a cucumber than squash, but without the bumps on the skin. There are over 60 varieties and super easy to grow if you are keen on growing them and guess what you can even eat the flowers too!

It’s a great one for dieting too as it contains minute amounts of saturated fat, with loads of fibre to help keep you regular and aid in removing toxins from the body. The other added benefit is that it contains lots of water and considering we are about 60% water and most of us don’t drink enough daily the more we can get through foods the better!

The source of potassium helps moderate blood pressure, reversing effects of too much sodium and the magnesium and zinc can help regulate blood sugar so perfect for diabetics.

Interestingly it is a good source of protein (18%), great for those that are avoiding meats or vegetarians.

Studies have shown that the starchy carbohydrates provide antioxidants, antidiabetic, anti-inflammatory and insulin regulating properties. The natural source of folate (B9) and iron are great for those growing a small human. It also contains vitamins: A; B’s; C and minerals: calcium; phosphorus; and manganese.

It is a great substitute for noodles, try spiralling it and using it as an alternative to pasta. It is highly versatile and suits many recipes and can be eaten raw or cooked, go ahead and try some today!
